The Brewery

Chilton Mill Brewing is a Brewer Owned and Operated 3.5 bbl craft brewery and taproom.

Behind Our Name: In the rural town of Clare, Suffolk County, England stood a five-storied, four-sailed, brick gristmill called the Chilton Street Mill where nearby, the cool waters of Chilton Stream ran fresh and fed the Stour River. It was there amid the vast and picturesque grain fields that the Chilton Street Mill functioned as a valuable source of the community’s commerce. Although no longer in service, it still stands to this day.

Finding origins of his own surname in that same Suffolk, England, the spinning hand of Fate placed Head Brewer and Owner, Mike Peachey, in a hilltop home on his own Chilton Street in Somerset County, New Jersey where he discovered his passion and started crafting and brewing his own recipes. Later, moving to New Hampshire he became immersed in the craft, while gaining knowledge from friends and brewers alike. All while holding tight to his dream of opening his very own brewery.

Seven Springs - German Pilsner: 5.5% Seven Springs is a culmination of beauty of balance. This golden lager is supported by a complex cracker-like malt character, while utilizing the fresh floral flavors and zesty lemony aromas of Hallertaü Mittlefrüh and Saphir hops

Patio Pale - Hazy Pale: 5.8% Heavily dry hopped with Citra, Rakau & Motueka; bursting with notes of citrus and mango! Refreshing and aromatic, with a subtle sweetness

Maibock 2026 - Helles Bock: 7.3% Brewed in celebration of Spring. This vivaciously refreshing lager layers malt complexity with intricate fruity, floral flavors and aromas thanks to Hallertaü Mittlefrüh & Hüll Melon hops!

Berrywave - Fruit Tart Ale: 7% Sweet ripe strawberries and juicy apricots combine to deliver fresh fruit-forward flavors with a subtle acidity. Creating a lush profile and smooth refreshing finish!

Rift - IPA: 7.2% Loaded with Citra, Peacharine & Cryo Krush. Rift opens with waves of ripe peach, nectarine and tropical fruit, while a bright citrus backbone lifts it up! Finishing soft, smooth and saturated with juicy hop character

Daddy’s Home - IPA: 7.5% Mike’s back in the brewhouse and bringin’ the haze! Citra, Motueka & Waimea Kief are exceptionally flavorful and effortlessly aromatic with overtones of key lime, papaya & pink grapefruit

Riptide - West Coast IPA 7% A balanced bitterness is bolstered by vibrant aromatics. Fresh flavors of resinous pine & sweet citrus rise from the glass, thanks to some West Coast classics, Columbus, Chinook, Simcoe, Cryo-Citra

Cold Creek - Triple IPA: 9% ABV Brewed for our Seventh Anniversary, this unfiltered Triple IPA is loaded with Freestyle Motueka, Peacharine & Peachrine Kief. Bursting with flavors of fresh Mackinaw peaches, juicy stone fruit and peach ring candy, this dank saturated haze bomb has been years in the making!
